Ingredients
- 2 Florida Grapefruit
- 1 thumb fresh ginger
- 2 tbsp sesame oil
- 1 mango, peeled and sliced
- 1 papaya, peeled and sliced
- 3 carrots, peeled and finely sliced
- 1 handful fresh Thai basil
- 1 handful fresh mint
- 60g peanuts, toasted
- 1 tbsp sesame seeds, toasted
Instruction
- Prep the grapefruit: peel and segment the Florida Grapefruit, catching any juices as you go, and place the segments into a mixing bowl.
- Zest the fresh ginger straight into the bowl for that warming, aromatic kick.
- Squeeze the remaining Florida Grapefruit halves over the segments, making sure to get every drop of juice—this forms the base of a zesty, fresh dressing.
- Pour over the sesame oil, then stir everything together.
- Assemble the salad: add the sliced mango, papaya, and carrots into a large bowl, then gently mix to coat everything in the grapefruit and sesame dressing.
- Finish with crunch & herbs: sprinkle in the toasted peanuts and sesame seeds, then add the fresh Thai basil and mint for an amazing burst of fragrance. Give everything a final toss to combine. Serve & enjoy!
