Florida Grapefruit Tea Cake

Ingredients

Earl Grey Genoise

60g eggs

35g granulated sugar

10g unsalted butter

6g milk

30g cake flour

1g earl grey

Frosting

8g Florida Grapefruit juice

75g cream cheese

15g powdered sugar

Decoration/Topping

1 Florida Grapefruit

Clear glaze – optional

Instruction

Preparation

Have the following ready before baking:

<Earl Grey Genoise>

  1. Sift the flour.
  2. Have water heated and ready for use.
  3. Line a cake pan with parchment paper.
  4. Preheat the oven to 180℃.

<Frosting>

  1. Sift powdered sugar.
  2. Bring cream cheese to room temperature.

Earl Grey Genoise

  1. Mix eggs and granulated sugar in a bowl, then place the bowl over water at about 60℃ and remove when the mixture has warmed up to about 35℃.
  2. Mix butter and milk in a small bowl, then place the mixture over water to reach 50℃.
  3. Beat Step #1 with a hand mixer on high speed until stiff and leaves a trace after dropping it from mixer.
  4. Reduce the speed to low and mix for about 1 minute to make a fine texture.
  5. Sift in the flour and earl grey.
  6. Using a rubber spatula until you don’t see any flour.
  7. Add a scoop of Step #6 to the bowl of Step #2 at 50℃ and mix until combined.
  8. Pour Step #7 back into Step #6 and mix thoroughly with a rubber spatula until well.
  9. Pour the mixture into the mold and make sure to tap the bottom of the mold to release air. *A regular parchment paper can be used, but a baking sheet that can be used over and over again will give you beautifully baked sides.
  10. Preheat the oven to 180℃, then lower the temperature to 160℃, and bake for 23 minutes. After removing from the oven, drop the cake on the table a few times to prevent deflating. Flip the cake to cool, then wrap in plastic wrap and leave overnight to moisten.

Frosting

  1. Squeeze juice from the Florida Grapefruit. *Since only 8g of the juice is used in this recipe, you can squeeze the juice out from the peel when you cut the grapefruit for the finishing touches.
  2. Add the powdered sugar and juice from Step #1 to the softened cream cheese and mix with rubber spatula.

Decoration/Topping

  1. Cut Florida Grapefruit in slices. This will be used to place on top of the cake.
  2. Place the Earl Grey Genoise with the bottom of the baking pan on top and drizzle with frosting. If you can make an elegant drip frosting effect, you can make the cake even more impressive and cute!
  3. Damp the cut grapefruit dry (Step #1) and place on top of cake. If you have clear glaze, you can add on top to add extra shine. You can add thyme or cake topper to complete.
