2 Florida Grapefruit
400ml full-fat cream (40% fat)
100g white baking chocolate
130g sugar
1 tablespoon sesame oil, toasted
1 tablespoon sesame seeds
Whipped cream for serving
Instruction
- Start by finely removing the zest from a grapefruit, then squeeze it to extract the juice.
- In a saucepan, bring the cream and sugar to the boil, stirring constantly, then add the grapefruit juice.
- Cut the chocolate into small pieces and add to the cream off the heat. Stir until the chocolate melts.
- Add the grapefruit zest and sesame oil.
- Pour the mixture into the verrines and chill for at least 2 hours.
- Just before serving, peel the second grapefruit and cut into segments. Add a generous dollop of whipped cream on top, then finish with fresh grapefruit and sesame seeds.
Tip: Leave to stand for at least 2 hours before serving.
