Florida Grapefruit Jar with Salt

Ingredients

2 Florida Grapefruit

80g coarse salt

30g sugar

4 sprigs rosemary

10 juniper berries

Instruction

  1. Start by cutting the Florida Grapefruit into thin slices.
  2. Place them into the jar, interspersed with salt, sugar, and juniper berries.
  3. Add an occasional sprig of rosemary.
  4. Finish by adding salt to the top and squeeze out a little juice.
  5. Leave to marinate for around 1 month, then use as and when required to spice up vinaigrettes, roast chicken, or soups.
