2 Florida Grapefruit
80g coarse salt
30g sugar
4 sprigs rosemary
10 juniper berries
Instruction
- Start by cutting the Florida Grapefruit into thin slices.
- Place them into the jar, interspersed with salt, sugar, and juniper berries.
- Add an occasional sprig of rosemary.
- Finish by adding salt to the top and squeeze out a little juice.
- Leave to marinate for around 1 month, then use as and when required to spice up vinaigrettes, roast chicken, or soups.
