Ingredients
- Juice from 3 Florida Grapefruit (freshly squeezed)
- 200g granulated sugar
- 200g water
- 20g fresh mint leaves, finely chopped
- Splash of gin and tonic
Preparation
1. Pour the sugar and water into a shallow pan on a medium heat.
2. Bring the pan up to a boil and simmer for 2-3 minutes.
3. Meanwhile cut all of the Florida Grapefruit in half and squeeze the juice into the boiled syrup along with the fresh mint leaves. You can also add the squeezed out fruit in the syrup to add more flavour.
4. Stir the ingredients together and leave to one side to cool.
5. Pour through and sieve to remove the Florida Grapefruit peels and the mint leaves.
6. Transfer the mixture into a shallow baking tray lined with parchment and place in the freezer for a minimum of 4 hours.
7. Stir the sorbet every hour or so during the 4-hour freezing time to help make a nice textured sorbet.
8. To serve, you may place a slice of Florida Grapefruit onto the bottom of a glass.
9. Add a scoop of the sorbet, then pour over some gin and tonic for the perfect cocktail dessert.
