Ingredients
- 250 ml Florida Orange Juice
- 125 ml Florida Grapefruit Juice
- 100 g Florida Orange Segments, seeded
- 100 g Florida Grapefruit Segments, seeded
- 375 ml soy sauce
- 125 ml lime juice
- ¾ medium red onion, sliced
- 900 g ahi tuna, sushi quality, cut into 3-centimetre cubes
- ¾ medium green onion, chopped
- 60 g macadamia nuts, toasted, chopped
- 20 g coriander, chopped
- 2 tbsp. fresh ginger, minced
- 2 tbsp. jalapeño peppers, seeded, sliced
- 1 tbsp. sesame oil
- 1 tbsp. sesame seeds
- Salt to taste
- Pepper to taste
- 8 red leaf lettuce leaves
Preparation
- Combine Florida Orange juice, Florida Grapefruit juice soy sauce, lime juice and red onions is a mixing bowl and whisk to continue.
- Place ahi tuna in marinade. Cover and refrigerate for 2 hours.
- To serve, remove ahi tuna and red onions from marinade and place in a mixing bowl. Discard marinade.
- Add green onions, Florida Orange segments, Florida Grapefruit segments, macadamia nuts, coriander, ginger, jalapeño, sesame oil and sesame seeds.
- Toss well to combine and season to taste with salt and pepper.
- Divide poke into 6 serving bowls. Place each bowl on a plate with 3 lettuce leaves to make the poke lettuce wraps.
