Creamy Florida Grapefruit Posset

Ingredients

  • 2-3 Florida Grapefruit
  • 400ml plant-based cream
  • 180g caster sugar
  • Mint or basil leaves

Instruction

  1. Start by scooping out the middle of 2-3 Florida Grapefruit, save the juice of half of a grapefruit.
  2. Add the plant-based cream, sugar, and grapefruit juice to a bowl and mix together; then simmer on medium heat for 5 minutes before pouring the mixture back into the Florida Grapefruit peels.
  3. Leave to set in the fridge for 3 hours before serving with mint or basil leaves and enjoy!
