Ingredients
- 1 cauliflower
- 4 tbsp Greek yogurt, plant-based or dairy
- 2 tbsp paprika
- 1 tsp salt
Spice Ingredients
- 2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp white pepper
- 1 tsp chilli flakes
- 1 tsp salt
- 1 tsp thyme
- 1 tsp oregano
- 2 handful plain flour
Salsa Ingredients
- 2 Florida Grapefruit, segmented and cut into small chunks
- 1 medium red onion, finely diced
- 1 red chilli finely, chopped
- 2 tbsp olive oil
- A handful of fresh mint, chopped
- A handful of fresh coriander, chopped
Served with:
- Tortilla wraps
- Greek yogurt, plant based or dairy
Preparation
1. For the cauliflower, cut the vegetable into chunks. Place into a bowl with a little salt and leave for 1 hour, then add the yogurt and paprika. Stir together before leaving for a further hour.
2. Mix all the spices together in a large bowl with the plain flour.
3. Remove the cauliflower from the yogurt, try and shake off the excess yogurt and dip in the seasoned flour.
4. Place the cauliflower into a pre-heated air fryer at 180c for 12-15 minutes or until crispy. Cook in small batches or about 6 at a time.
5. Spray a little bit of oil over the cauliflower to help them turn crispy while cooking in the air fryer.
6. While the cauliflower is cooking, chop the red onion as thinly as possible and place into a bowl with the Florida Grapefruit segments and the freshly chopped chilli.
7. Add the oil and half of the herbs when the cauliflower is nice and crispy. Remove from the fryer and serve in the wraps with a little yogurt, fresh herbs, and some of the delicious Florida Grapefruit salsa. Enjoy!
