Baked Feta with Florida Grapefruit Gremolata

Ingredients

  • 1 Florida Grapefruit (zested and juiced)
  • 200g feta cheese
  • 1 tbsp extra virgin olive oil
  • 1 red chili, finely chopped
  • 100g bread
  • 20g fresh parsley
  • 20g fresh mint
  • 4 slices of toasted sourdough bread

Instruction

  1. Prepare the feta: place the feta cheese in a baking dish, then drizzle over the olive oil and Florida Grapefruit juice—this brings a gorgeous citrusy balance to the rich, salty cheese.
  2. Make the gremolata: in a food processor, blend together the bread, parsley, mint, grapefruit zest, and a drizzle of olive oil until you get a coarse, crunchy crumb.
  3. Assemble and bake: sprinkle the finely chopped red chili over the feta, then top with the gremolata mixture, pressing it gently onto the cheese.
  4. Bake: preheat your oven to 170°C and bake for 15 minutes, or until the feta is softened and the topping is golden and crisp.
  5. Serve and enjoy! Place the baked feta in the centre of the table with toasted sourdough on the side.
