Makes 10 pancakes
Ingredients
- 3 Florida Grapefruit, zest for pancakes
- 100g Caster sugar
- 300g self-raising flour
- 2 large free range eggs
- 300ml milk (approximately)
- 1 tbsp honey
- Greek yogurt, spoonful
Preparation
1. Cut the top and bottom off the Florida Grapefruit, then slice the outer skin from the fruit.
2. Cut the fruit into slices and place into a frying pan with the sugar on a low heat.
3. Leave the sugar to dissolve as it heats up and simmer for 10 minutes.
4. Meanwhile, to make the pancakes, place the flour, eggs, milk, and honey into a mixing bowl and whisk together to form a thick batter that can pour.
5. Pre-heat a non-stick frying pan and add just a little oil. Pour some of the pancake mix directly into the centre of the pan and let it spread to form a pancake.
6. Cook for 1-2 minutes on each side.
7. Repeat the process until you have cooked all of the pancakes, then serve with the caramelised Florida Grapefruit and a spoonful of Greek yogurt.
