Serves 4
Ingredients
- Juice of 1 whole Florida Grapefruit – approximately 100ml
- 1 Florida Grapefruit, sliced into segments
- 150g rolled porridge oats
- 1 x 400g tin of coconut milk
- 350ml of cold water
- 1-2 tbsp of golden caster sugar
- Handful of raspberries (optional topping)
- 2 – 3 tsp of pomegranate seeds (optional topping)
Preparation
1. Add the oats, coconut milk and water to a pan and mix gently. Heat on medium high and continually stir to prevent any sticking. Don’t allow to fast boil but keep on the heat, stirring for 8-9 minutes until thick and creamy.
2. Remove from heat, add the sugar, and stir through the Florida Grapefruit juice. Add a little bit of sugar at first and then more to taste.
3. Serve straight away with fresh Florida Grapefruit segments. Add other toppings if you fancy.
